I read a LOT of cookbooks and I can’t recommend Thomas Keller’s new Ad Hoc Cookbook enough.
It’s like French Laundry for the rest of us. (I love French Laundry, have been there 3 times, and did not mind losing $300/meal in the process.)

I was skeptical when I got this since every recipe seemed so insanely involved. But once I started digging into it, it all started making sense. So far I’ve tackled:
1. Roast chicken with root vegetables.
2. Curried cauliflower and chick pea salad (this blew my mind)
3. Pickled carrots, which have become my go-to snack.
